Here is something that is a little exciting. Three wins at the NAMSC/IMSI makes 60 years of excellence. Here is the current crew that make it all happen. Starting in the back row left side; Ed Swenson holding two awards – one is the WMPSA 1957 1st place award the 2nd is the 1958 WMPSA 1st place award. Ty Fisher holding awards from the 2007 NAMSC/IMSI held in Akron Ohio, one is 3rd place Dark Amber, one is 1st place Medium Amber and the Best of Show award. Corey Norby holding awards from the 2012 NAMSC/IMSI held in Mystic CT. one is the 3rd place Granular Maple Sugar, one is 2nd place Dark Amber. Something new and exciting in 2007, is our berry flavored pure maple syrup. The only thing that comes close to our love for quality maple syrup is fresh fruit. Our first test was mixing maple syrup with fresh cherry juice. It was a big hit with all who were lucky enough to have a sample. Next the raspberry test and again a huge success, followed by blueberry and strawberry which also received rave reviews. Fine maple syrup has the characteristic of enhancing the taste of your breakfast entrees. This characteristic also works extremely well with the fruit flavored syrups. A very common response from people who have tried the fruit flavored syrups is, “I have never tasted anything so wonderful.” So we have expanded on our maple syrup by adding 100% natural fruit to create a unique taste treat. The combination of maple syrup with blueberry, cherry, raspberry, cranberry, or strawberry is truly a new taste sensation.

Maple sugar is made by continuing the boiling process until the water is removed.  What remains is sugar with texture and color similar to brown sugar, but has an excellent light maple taste.  Use it in baking, cooking or sprinkling on pancakes, French Toast, waffles or cereals.

Maple Sugar Nutritional Information

Pure maple sugar is a “natural” food, processed by heat concentration of pure maple sap, which is the nutrient liquid utilized by the plant for the annual growth of its tissues.

Sugars

The main sugar in pure maple sugar is sucrose which is an important source of energy. In order of sweetness, sucrose is less sweet than fructose, sweeter than glucose. Maple sugar’s caloric value is 50 calories per tablespoon, while molasses is 40, corn syrup is 60 and honey is 45 per tablespoon.
